Pumpkin Pecan Cheesecake
beat: 8 oz. softened creme cheese and 1/3 c. brown sugar until smooth--
add 2 beaten eggs and mix well--
fold in 3/4 c. pumpkin butter--
pour into a prepared graham cracker crust (9 in) and bake 40 min
at 350--
in meantime, mix 1/2 c. chopped pecans
1/4 c. brown sugar
2T. cold butter--
cut with pastry cutter until crumbly--
spoon onto top of cheesecake when it comes out of the oven--
bake additional 5 min.
--chill at least 4 hours--
serve with either whipped topping or vanilla ice creme
Nancy Yaley Chicken Salad
4 c. diced, cooked chicken
15 oz. pineapple chunks drained (I chop them smaller)
1 c. celery
11 oz can Mandarin oranges drained (I chop them too)
1/2 c. chopped green pepper
4 T. grated onion
MIX ABOVE AND STIR WELL. add
1 T. mustard mixed with 1 c. Miracle Whip Salad dressing--
refrigerate several hours, just before serving add about a cup
of slivered almonds and 5 oz package of chow mein noodles
**NOTE--this makes a huge amount, if you think you might have some
left over, do NOT add the chow mein noodles to all of it, as they get
really soggy in a couple hours
NOTE--I call this "Nancy Yaley" chicken to honor Nancy Yaley,because I first had it
at Nancy's house one day in the summer, we were both young teachers, and not long
after that she had heart failure and died on the way to her workout
at the gym one morning. She was one of those perpetually happy, up-beat persons
who made everyone around her feel better, just knowing her.
Shrimp and Black Bean Soup
saute 1 large onion in large soup kettle
add 2 cans chicken broth
2 cans Rotel tomatoes with chilies (ORIGINAL RECIPE)**or hotter versions!!!
2 c. frozen or canned corn
2 cans black beans, rinsed and drained
1 T. Sugar
***some chili powder--it will be pretty "warm" already from the Rotel tomatoes,
I cook this for several hours in crock pot or on stove top, add 2 lbs shrimp about
an hour before serving (I used Maine shrimp, precooked and fresh from Gilmore's,
right down my street)---
**COULD ALSO LEAVE OUT SHRIMP AND/OR ADD HAMBERGER INSTEAD!!
Creamy Chicken Noodle Soup
Put I package Reames frozen egg noodles (Wal-Mart) in very large soup kettle with
2 quarts water, just barely bring to a boil, add 3 t. of your favorite seasoned salt, 1 large onion chopped,
also about a cup of both celery and carrots and some chicken bouillon--cook until the noodles and
vegetables are tender (watch so don't stick and burn to the bottom)--when done,
add 1/2 t. garlic powder, about 2 c. chopped cooked chicken (I used 1 large can) and pepper to taste
(or any other spices you prefer)--at the end when all is cooked through and seasoned well, add
large carton sour cream (I used fat free), heat through, and serve (at this stage, I put in crock pot
for a couple hours to keep warm)--this soup thickens as it cools!
**you could also add potatoes, hot pepper flakes, and/or more sour cream if you want it REALLY creamy!!
